TikTok Phenom Jon Kung on why they prefer induction over gas

TikTok phenomenon Jon Kung’s 1.5 million followers love the Detroit chef for his 60-second easy recipes (their most popular has 14.5 million views at press time).
Some of their creations are made using only wok pans and portable induction cooktops.Below, Kung tells us why they think cooking with gas is a thing of the past, and shares a quick and easy recipe.
Kung: Induction cooking offers the simplicity of an electric range and the power of a gas range, but with more control.For example: You can set an induction cooktop to a more precise specific temperature than gas and keep it on for hours, basically turning any pot into a slow cooker.
Once you get over the learning curve, induction will make you a better cook because it’s faster, more efficient, and more precise.It’s definitely better for the air quality in your home.
For a while, I had an induction cooktop that plugged directly into a wall outlet.It comes with a wok, steamer and induction cooker.The whole setup is less than $200.
My first time using induction to season a wok and I didn’t expect it to get hot so quickly.It ignited a puddle of oil!Since then, I’ve definitely paid more attention and respect to the speed at which the induction cooker heats up.
But learning how to cook with induction is easy: Start with a small nonstick induction-compatible frying pan, then learn how to fry eggs.You will feel the difference between induction heat and gas or electricity.Once you get the hang of it, it becomes second nature.
The best thing about induction is that you can buy just one burner.They start at less than $100.Starting alone is a really good, non-committal way to introduce yourself to induction cooking.
I started with a magnetic stainless steel wok.But many people already have induction-ready cookware in their kitchens.If you have carbon steel or cast iron cookware, you have induction compatible cookware.It’s really easy to check.Just grab a strong magnet and see if it sticks to the pot or pan.If it sticks, it works.
Heat the oil to 300ºF and carefully pour it into a metal bowl with ginger and scallions.(This is ginger scallion oil, and you can put it on anything delicious.)
Take a tablespoon of this oil and put it in a nonstick skillet over medium heat.When the oil is hot, beat in an egg.
In a circular motion, slide the pan to mix the eggs with the oil.If you prefer your eggs to plain, give it a flip.
